  • 3 cloves garlic, smashed Releases aromatic essence.
  • 3 scallions, roughly chopped Finishes with fresh flavor.

Method

Preparation
  1. You can choose to peel the sweet potatoes or leave the skin on for added fiber and nutrients. Cut them into 1-inch cubes and keep them submerged in water if you’re prepping ahead of time.
Cooking
  1. In a large skillet, heat the olive oil over low heat.
  2. Add the wet sweet potato cubes along with the thyme, black pepper, salt, smoked paprika, and hot pepper flakes, ensuring each piece is well-coated.
  3. Cover your skillet with a lid and allow the sweet potatoes to steam for about 7 minutes.
  4. Create a well in the center of the skillet and add the onion, bell pepper, garlic, and scallions.
  5. Stir everything together, leaving the pan uncovered. Cook for an additional 5 to 7 minutes until the sweet potatoes are fully cooked through, and the vegetables are at your desired texture.
  6. Before serving, taste the hash and adjust the salt as needed. Serve hot and enjoy.
  7. Optional: Create small wells in the mixture, crack in a few eggs, cover the skillet, and cook for around 4 minutes.

Notes

For a crispy finish, let the hash sit undisturbed for a few minutes before stirring, allowing the bottom to caramelize. Customize with other vegetables such as zucchini, mushrooms, or spinach. Herb variations include rosemary or oregano.
