Preparation
- Preheat your oven to 350º F.
- Melt 2 tablespoons of butter in a medium skillet over medium-low heat.
- Add the sliced squash and chopped onions. Cook until tender for about 5-7 minutes, stirring occasionally.
- In a large bowl, whisk the eggs and then add the milk, mixing until smooth. Fold in the cheddar cheese.
- Stir in the cooked squash and onions to the egg mixture until well combined.
- Melt the remaining 2 tablespoons of butter and pour it into the mixture along with the cayenne pepper, salt, and black pepper. Mix thoroughly.
Baking
- Spray a 9x13 casserole dish with cooking spray and pour the mixture into the dish.
- Crush the Ritz crackers and sprinkle them over the top of the casserole.
- Bake for approximately 45 minutes until the top is golden brown and the casserole does not jiggle.
- Let the casserole sit for about 3 minutes before serving.
Notes
For added flavor, consider herbs like thyme or parsley. To make it vegetarian, substitute cheese with a dairy-free option. Check for doneness a few minutes early.
