  • 1/2 teaspoon onion powder Enhances flavor with a hint of sweetness.
  • 1/2 teaspoon garlic powder Adds a savory depth.
  • 1/2 teaspoon paprika Brightens the dish with subtle smokiness.
  • 4 ounces diced green chiles, drained Provides a tangy bite.
  • 28 ounces enchilada sauce A hearty sauce that binds elements together.
  • 3 cups grated sharp cheddar cheese Creates a delicious topping.
  • 8 pieces corn or flour tortillas Perfect wrap for the filling.

Method

Preparation
  1. Preheat your oven to 350 degrees F.
  2. Heat a skillet over medium-high heat and add the olive oil and lean ground beef.
  3. Break up the beef with a spatula as it cooks.
  4. Stir in the spices: chili powder, kosher salt, ground cumin, onion powder, garlic powder, and paprika. Cook until the meat starts to brown.
  5. Add diced green chiles and 2/3 cup of the enchilada sauce to the skillet, mix well, and set aside.
  6. Pour about 3/4 cup of enchilada sauce into the bottom of a 9x13 baking dish.
  7. If using corn tortillas, microwave them wrapped in a damp paper towel for 45 seconds.
Assembly
  1. Fill a tortilla with about 3 tablespoons of the beef mixture and 2-3 tablespoons of cheddar cheese.
  2. Roll the tortilla tightly, seam-side down in the baking dish, and repeat with remaining tortillas.
  3. Pour remaining enchilada sauce over the rolled tortillas and sprinkle with remaining cheddar cheese.
Cooking
  1. Cover the dish with foil and bake for 20 minutes.
  2. Remove the foil and bake for an additional 5-10 minutes until bubbly and cheese is golden brown.

Notes

For deeper flavor, marinate the ground beef with spices before cooking. Consider adding cream cheese for extra creaminess. Garnish with fresh cilantro, diced onions, or jalapeños for added freshness.
