Preparation
- Preheat your grill to high for quick and even cooking.
- In a large mixing bowl, combine beef mince, rose harissa paste, cumin seeds, grated garlic, salt, and black pepper. Mix well using your hands.
- Divide the spiced mince into four portions and spread one portion onto each flatbread. Drizzle with olive oil and place on a baking tray.
- Drain and thinly slice the roasted red peppers and white onion. Soak the onion slices in ice water for extra crispness.
- Toss the sliced peppers and onions in a bowl with lemon zest, half the lemon juice, salt, and olive oil.
Cooking
- Grill the flatbreads for 5-7 minutes, monitoring them closely.
Assembly
- Remove flatbreads from the grill and top each with Greek yogurt and the pepper-onion salad. Garnish with dill.
Serving
- Roll the flatbreads tightly and serve with the remaining lemon cut into wedges.
Notes
For best results, season the beef mixture well. Adjust harissa to your spice preference. Grilling the onions before adding to the salad can enhance the flavor. Keep flatbreads warm in a towel after grilling.
