Root Vegetables

Seasoning and Oils
  • 1/4 cup olive oil This adds a luscious finish while helping the veggies caramelize.
  • 3 tablespoons maple syrup Adds sweetness and a hint of life-affirming warmth.
  • 2 tablespoons ground cumin The aromatic spice offers a warm, earthy flavor.
  • 2 teaspoons ground cinnamon The sweet warmth of cinnamon enhances the dish's overall essence.
  • 1 tablespoon kosher salt (plus more as needed) Essential for balancing flavors.
  • 8-10 sprigs assorted hearty herbs (rosemary, sage, and/or thyme) These herbs envelop the vegetables in a fragrant embrace.
  • to taste freshly cracked black pepper A finishing touch that adds an extra layer of complexity.

Method

Preparation
  1. Preheat your oven to 425°F.
  2. Slice about 1/4 inch off the top of each garlic bulb to expose the cloves. Cut the shallots in half lengthwise, keeping the skin on for added flavor while roasting.
Roasting
  1. Arrange the quartered root vegetables, garlic, and shallots on a large baking tray (or two if necessary).
  2. Drizzle the olive oil and maple syrup over the vegetables. Sprinkle on the ground cumin, cinnamon, and kosher salt, and toss everything together until the vegetables are evenly coated.
  3. Place the trays in the preheated oven and roast for about 35-40 minutes, tossing and flipping the vegetables halfway through.
  4. Once tender and caramelized, transfer the roasted vegetables to a large serving platter.
  5. Finish by sprinkling with flaky sea salt and freshly cracked black pepper.

Notes

Opt for firm vegetables with vibrant colors. Feel free to mix and match herbs, and add lemon juice before serving for brightness. Leftovers can be used creatively.
