Ingredients

For the Fudge
  • 2 tablespoons unsalted butter Essential for flavor and preventing sticking.
  • 2 cups sugar Provides sweetness and structure.
  • ¾ cup milk Adds richness.
  • 2 oz unsweetened chocolate Enhances the deep chocolate flavor.
  • ½ teaspoon kosher salt Balances sweetness.
  • 1 tablespoon light corn syrup Adds shine and prevents crystallization.
  • 1 teaspoon vanilla extract Enhances flavor.
  • walnut halves (for finishing; optional) Adds decoration and texture.

Method

Preparation
  1. Butter the sides of a heavy saucepan and grease a baking dish or loaf pan. Optionally line with parchment paper.
Cooking
  1. Combine sugar, milk, chopped chocolate, salt, corn syrup, and butter in the greased saucepan.
  2. Set burner to medium-high heat and stir until sugar is dissolved, then bring to a gentle boil.
  3. Attach a candy thermometer and cook without stirring until mixture reaches 236°F (soft-ball stage).
  4. Drop a small spoonful into ice water to ensure it forms a soft, pliable ball.
  5. Remove from heat and let cool until it drops to 110°F.
  6. Add vanilla extract and beat vigorously until it stiffens and loses its gloss.
  7. Push mixture into prepared dish without scraping the sides.
  8. Score into squares and press a walnut half into the center of each square if desired.
  9. Once cooled, cut into pieces and enjoy.

Notes

Use a candy thermometer for the best texture. Allow fudge to cool completely before slicing. If it doesn't set, beat longer for more air incorporation.
