Method

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar for about three minutes until light and fluffy.
  3. Add the eggs, green food coloring, and peppermint extract to the creamed mixture and mix for another 2-3 minutes.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, cream of tartar, and salt.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  6. Fold in the Andes Creme de Menthe Baking Chips and semi-sweet chocolate chips until evenly distributed.
  7. Using a 2-tablespoon-sized cookie scoop, drop dollops of dough onto the prepared baking sheet, leaving space between each cookie.
  8. Bake for 9-11 minutes until slightly jiggly in the centers and beginning to crack on top.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For extra flavor, consider adding chopped fresh mint leaves. Use room temperature butter for better texture. Adjust peppermint extract to taste, but use caution as it's potent.
