Ingredients

Main Ingredients
  • 500 grams anchovies Fresh, gutted anchovies, known as hamsi.
  • 1 cup cornmeal For a crispy crust.
  • 2 teaspoons salt Enhances the natural flavors.
  • 1.5 cups oil For frying to achieve a crispy finish.
  • 1 medium lemon For fresh lemon juice.
  • 1 medium onion For garnish.
  • 0.5 bunch parsley For garnish.
  • 4 slices bread For soaking extra juices.

Method

Preparation
  1. Rinse the hamsi under cold water to remove any excess salt or impurities. Place them in a strainer to drain off the water.
  2. Pour the cornmeal onto a plate. Sprinkle the salt over it and mix well.
  3. Coat each anchovy in the seasoned cornmeal and arrange them on a plate.
Cooking
  1. In a large frying pan, heat the oil over medium-high heat.
  2. Test the oil's readiness by sprinkling a pinch of salt; it should sizzle.
  3. Carefully add the coated anchovies in batches to the hot oil. Fry for about 1 minute on each side until golden.
  4. Transfer the fried anchovies to a paper towel-lined plate to drain excess oil.
Serving
  1. Serve the Hamsi Tava warm, garnished with chopped parsley, lemon wedges, and sliced onions.

Notes

Choose fresh anchovies for best flavor. Ensure the oil is hot enough before frying to avoid sogginess and experiment with seasonings if desired.
