Method

Preparation
  1. Take the T-Bone Steak out of the fridge and its packaging. Pat both sides dry with a paper towel.
  2. Season generously with olive oil, salt, and pepper on both sides. Allow the steak to rest until it reaches room temperature.
Grilling
  1. Preheat the grill to high heat.
  2. Place the steak on the hot grill and sear for 2-3 minutes with the lid closed.
  3. Rotate the steak 90 degrees and sear for another 2-3 minutes to create grill marks.
  4. Carefully flip the steak and sear the other side for 2-3 minutes, then rotate 90 degrees again for an additional 2-3 minutes.
  5. Cook for an extra 8-12 minutes, checking for preferred doneness with a meat thermometer (135°F for medium-rare).
Resting
  1. Remove the steak from the grill and let it rest on a cooling rack for about 7-8 minutes.
Compound Butter Preparation
  1. Mix the room-temperature butter, chopped cilantro, parsley, oregano, and diced garlic in a small bowl.
  2. Scoop the mixed butter onto plastic wrap, shape it into a cylinder, and refrigerate for at least one hour.
Serving
  1. Slice the compound butter into discs and place on top of the rested steak.

Notes

Don’t rush the resting; it’s vital for juicy steak. Use a meat thermometer for perfect doneness, and consider marinating the steak beforehand for added flavor.
