Method
Cooking the Chicken
- In a large stock pot or Dutch oven, place the chicken, water, and salt.
- Bring the water to a boil and then reduce it to a simmer.
- Cover and let it cook for about 1 hour until the chicken is tender and fully cooked.
Shredding
- Once cooked, carefully remove the chicken from the pot and allow it to cool slightly.
- Shred the meat, discarding the bones, and set aside the shredded chicken.
Reserve the Broth
- Strain and reserve 6 cups of the water used to cook the chicken.
Sauté Aromatics
- Empty the stock pot of any remaining contents.
- Return the pot to the stove and heat the olive oil over medium heat.
- Add the diced onion, minced garlic, and grated ginger.
- Sauté for about 5 minutes until the ingredients soften and become fragrant.
Add Vegetables
- Add the diced celery and chopped carrots to the pot.
- Stir and sauté for an additional 5 minutes until they begin to soften.
Combine Ingredients
- Add the reserved shredded chicken and broth back into the pot.
- Bring the entire soup to a boil, then reduce it to a simmer.
- Cover and let it simmer for about 20 minutes.
- Feel free to let it go longer for deeper flavor.
Cooking the Noodles
- After simmering, add in the brown rice noodles.
- Cover the pot again and allow the noodles to cook for about 5 minutes until tender but not mushy.
Finishing Touches
- Once the noodles are cooked, remove the soup from heat.
- Squeeze in juice from the limes, add chopped cilantro, and sprinkle with pepper.
- Taste and adjust seasoning, adding salt if necessary.
Serve
- Ladle the soup into bowls, serve with additional lime wedges, chopped cilantro, and a side of crusty bread for dipping.
Notes
To enhance flavors, try marinating the chicken in lime juice and ginger for an hour before cooking. For a vegetarian option, substitute chicken with firm tofu and vegetable broth, adjusting cooking times accordingly.
