Ingredients

Cookie Base
  • 1 cup unsalted butter For a rich, creamy base.
  • 1/3 cup instant espresso Adds a robust coffee flavor.
  • 2 1/4 cups all-purpose flour Provides structure.
  • 1 tablespoon cornstarch For softness and chewiness.
  • 1 teaspoon baking soda Helps the cookies rise.
  • 1 teaspoon sea salt Enhances flavors.
  • 1 cup brown sugar (firmly packed) Imparts moisture and caramel flavor.
  • 3/4 cup granulated sugar Provides sweetness.
  • 1 large egg (room temperature) Binds ingredients together.
  • 1 large egg yolk (room temperature) Adds richness.
  • 2 teaspoons vanilla extract For warm, aromatic essence.
  • 1 cup chopped chocolate Adds rich chocolate flavor.

Method

Preparation
  1. Melt the unsalted butter in a saucepan until it turns dark amber and the milk solids caramelize, then let it cool slightly.
  2. Stir the instant espresso into the melted butter until fully dissolved, then set aside to cool completely.
  3. In a small bowl, whisk together the flour, cornstarch, baking soda, and sea salt until well mixed.
  4. In a larger mixing bowl, beat the cooled butter and both sugars together until light and fluffy.
  5. Add the egg, egg yolk, and vanilla extract to the butter-sugar mixture and beat until smooth.
  6. Gradually stir in the dry ingredients until just combined.
  7. Fold in the chopped chocolate until evenly distributed.
  8. Portion the cookie dough into 2-tablespoon-sized balls, cover, and chill in the refrigerator for at least one hour.
  9. Preheat your oven to 350°F and line two baking sheets with parchment paper.
  10. Space the cookie dough balls about 2 inches apart on the baking sheets and bake for 8-10 minutes until edges are golden brown.
  11. Let the cookies rest on the sheets for one minute before transferring them to a wire rack to cool completely.
  12. Sprinkle some flaky sea salt on top while they are still warm, if desired.

Notes

Chilling the dough enhances flavors and maintains cookie shape. Use quality chocolate for best flavor results. Consider adding cinnamon or almond extract for unique flavors.
