Method

Preparation
  1. Preheat the oven to 375°F (190°C) and line a cookie sheet with parchment paper.
  2. In a medium mixing bowl, whisk together the dry ingredients: gluten-free oat flour, baking powder, baking soda, ground cinnamon, and salt. Set aside.
  3. In a large mixing bowl, combine the solid coconut oil and coconut sugar. Use a pastry cutter or fork to mix until the texture resembles clumpy wet sand.
  4. Add the modified flax egg and vanilla extract to the coconut mixture, whisking until incorporated.
  5. Gradually add the dry mixture to the wet mixture while using a hand mixer on low speed. Mix until a cohesive dough forms.
  6. If dough is sticky, cover and chill in the freezer for 15-25 minutes.
Baking
  1. Using a 2-tablespoon cookie scoop, drop balls of dough onto the prepared baking sheet and press chopped pecans into the tops.
  2. Bake for 10-14 minutes, tapping the baking sheet to flatten the cookies.
  3. Cool on a rack for 10 minutes before transferring cookies to cool completely.
