Ingredients

Pie Crust
  • 1 piece bottom pie crust For a flaky and buttery base, follow my favorite Foolproof Pie Crust recipe.
Filling
  • 8 ounces pecan halves Brings a wonderful crunch and earthy aroma.
  • 3 large eggs Adds a rich texture.
  • 1/4 cup sour cream Adds tangy creaminess.
  • 1/2 cup light or dark brown sugar Contributes to caramel-like goodness.
  • 1/4 cup granulated sugar For additional sweetness.
  • 1 1/4 cups sorghum syrup or maple syrup Provides signature sweetness.
  • 1 tablespoon apple cider vinegar Adds a hint of acidity.
  • 2 tablespoons butter, melted Infuses a rich flavor.
  • 2 teaspoons pure vanilla extract Rounds out the flavor.
  • 1 1/2 tablespoons flour Thickens the filling.
  • 1 teaspoon table salt To elevate flavors.

Method

Preparing the Pie Crust
  1. Roll out and fit the bottom pie crust into the pie plate, extending the edge about 1/2 inch over the top.
  2. Cover loosely with plastic wrap and refrigerate for up to 24 hours.
Toasting the Pecans
  1. Heat a dry skillet over medium heat and add pecan halves. Toast until darker and fragrant.
  2. Transfer to a plate to cool completely.
Mixing the Filling
  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, beat the eggs until blended, then mix in sour cream.
  3. Add the sugars, sorghum or maple syrup, apple cider vinegar, melted butter, and vanilla. Whisk until combined.
  4. In a small bowl, mix flour and salt, then add to the batter, whisking until smooth.
  5. Fold in the cooled, toasted pecans.
Assembling and Baking
  1. Pour the filling into the prepared pie crust.
  2. Bake for 50-60 minutes. Shake gently to check for doneness; slight jiggle means it's done.
  3. Remove from oven, sprinkle with sea salt, and let cool completely before slicing.

Notes

Consider adding bourbon or cinnamon for extra flavor. Let the pie cool completely to improve slicing texture.
