Ingredients

Pasta
  • 8 oz Dried pappardelle pasta Alternatively, use 12 ounces of fresh pappardelle.
Mushrooms
  • 10 oz Oyster mushrooms Or a mix of wild mushrooms.
Aromatics
  • 2 tbsp Unsalted butter
  • 3 cloves Garlic, minced
  • 1 large Shallot, minced
Sauce Ingredients
  • 3/4 cup Heavy cream
  • 1 tsp Dijon mustard
  • 1 large Lemon, zested
  • 1/4 cup Parmigiano-Reggiano cheese, grated For finishing, plus juice from half a lemon.
  • 1/4 cup Flat-leaf parsley, minced For garnish.
Cooking Oil
  • 2 tbsp Neutral oil (e.g., canola)

Method

Cooking the Pasta
  1. Bring a large pot of salted water to a boil and add 8 ounces of dried pappardelle pasta. Cook until just shy of al dente, following package instructions, then drain and reserve 1 cup of the pasta cooking water.
Preparing the Mushrooms
  1. Remove hard, woody stems from the mushrooms and tear or slice them into bite-sized pieces.
Cooking the Mushrooms
  1. Heat a large skillet over medium-high heat and add 2 tablespoons of neutral oil. When shimmering, add the mushroom pieces, cooking in batches if necessary for 2-3 minutes on each side until golden-brown.
  2. Transfer cooked mushrooms to a plate and sprinkle with salt and black pepper.
Cooking the Aromatics
  1. In the same skillet, lower the heat and add 2 tablespoons of unsalted butter, minced garlic, and shallot. Sauté over medium-low heat for 1-2 minutes until aromatic.
Simmering the Sauce
  1. Stir in 3/4 cup of heavy cream, 1 teaspoon of Dijon mustard, lemon zest, and the cooked mushrooms. Season with salt and black pepper, simmering over low heat for 2-3 minutes until slightly thickened.
Combining Ingredients
  1. Add the drained pasta to the skillet and toss to coat with the creamy sauce. If too thick, add reserved pasta cooking water to adjust consistency.
Finishing the Dish
  1. Remove from heat and stir in 1/4 cup of grated Parmigiano-Reggiano, juice of half a lemon, and minced parsley. Adjust seasoning as necessary.
Serving
  1. Divide the creamy mushroom pappardelle among serving bowls and top with extra cheese and parsley.

Notes

Consider adding spinach or fresh peas for added nutrients and color. A pinch of red pepper flakes can add spice. Let the mushrooms sear properly for the perfect golden crust.
