Method

Preparation
  1. Begin by dicing the onion and mincing the garlic. Set these aside.
  2. Remove the clear casing from the Italian sausages. In a large, oiled pot over medium heat, add the sausage. Cook until browned.
  3. Remove the sausage from the pot and set aside.
  4. In the same pot, add the diced onions, sauté for 3 minutes until tender, then add garlic and red pepper flakes, stirring until fragrant.
Cooking
  1. Stir in the tomato paste and let it cook for a couple of minutes.
  2. Add the canned tomatoes, breaking them part for a smooth consistency.
  3. Pour in the beef broth and bring mixture to a boil. Season with salt, pepper, and Italian seasoning.
  4. Add the lasagna sheets and stir occasionally to prevent sticking.
  5. When noodles are about three-quarters cooked, stir in the heavy cream and let it simmer gently.
  6. Return the cooked sausage and add fresh herbs. Stir to combine and adjust seasonings.
Assembly
  1. Combine ricotta, mozzarella, and Parmesan in a bowl, seasoning as desired.
  2. Serve the soup hot, topped with the cheese mixture and fresh basil.

Notes

For extra creaminess, add a splash of cream at the end. Substitute spicy sausage or increase red pepper flakes for a spicier kick.
