Preparation
- Preheat your oven to 350 degrees Fahrenheit.
- In a large bowl, combine the shredded chicken, sour cream, cream cheese, salt, pepper, green chilies, hot sauce, jalapeno, and 2 cups of pepper jack cheese. Mix thoroughly until well combined.
- Pour a small amount of green enchilada sauce on the bottom of a 9x13 baking dish and spread it evenly.
- Place a generous portion of the cream cheese chicken mixture down the center of each tortilla. Roll them up tightly and place seam side down in the baking dish. Repeat until all the mixture is used.
- Pour the remaining green enchilada sauce over the rolled tortillas and sprinkle the rest of the pepper jack cheese on top.
Cooking
- Cover the baking dish with foil and place it in the oven. Bake for 20 minutes.
- After 20 minutes, remove the foil and bake for an additional 8-10 minutes, or until the cheese is bubbling and slightly golden.
Serving
- Garnish with fresh cilantro and slices of avocado. Enjoy your delicious creamy enchiladas!
Notes
Make ahead for convenience, customize heat levels to taste, consider using different cheeses or proteins, and add a layer of crushed tortilla chips for crunch.
