Method

Preparation
  1. In a large bowl, combine the grated onion and its juices, breadcrumbs, egg, kosher salt, and black pepper until well mixed.
  2. Add the lean ground beef to the mixture and gently combine using your hands.
  3. Divide the beef mixture evenly into four sections and shape each into an oval-shaped patty, about 3/4 of an inch thick.
Cooking
  1. Heat a large skillet over high heat for about two minutes.
  2. Swirl in the extra-virgin olive oil to coat the pan and add the patties, searing for two minutes on each side.
  3. Remove the patties to a plate.
  4. In the same skillet, add the butter and melted it before tossing in the sliced mushrooms, cooking for about two minutes until golden brown.
  5. Sprinkle the flour over the mushrooms, stirring to coat and cook for an additional minute.
  6. Gradually add the beef broth while stirring to mix in the flour thoroughly and let it come to a simmer.
  7. Return the steak patties to the skillet, letting them simmer uncovered for five minutes until cooked through and the gravy has thickened.

Notes

Consider adding minced garlic or a splash of Worcestershire sauce for flavor. Letting the patties rest after cooking allows the juices to redistribute.
