Preparation
- Preheat your oven to 150°C (140°C Fan) or 300°F. Line a 20cm x 30cm (8 x 12 inches) baking tin with baking parchment.
- Break the chocolate into pieces and place it in a large bowl along with the unsalted butter. Microwave the mixture for 2 minutes or until melted, then stir until combined and let cool slightly.
- In a separate bowl, combine the self-raising flour, cocoa powder, and muscovado sugar. Mix well to ensure there are no lumps.
Mixing
- Gradually pour the flour and sugar mixture into the melted chocolate and stir until you form a smooth and glossy brownie batter.
- Incorporate the beaten eggs into the batter, stirring until well combined.
- Fold in the chopped pecan nuts evenly throughout the batter.
Baking
- Pour the brownie mixture into the lined baking tin, smoothing the top. Bake for 1 hour, or until set but still soft in the center.
- Remove from the oven and let cool completely on a wire rack before slicing into squares.
- Store the brownies in an airtight container with baking parchment between layers to prevent sticking.
Notes
Consider adding a pinch of sea salt for extra flavor. Use room temperature butter for easier mixing. Whole pecans can be added on top for extra texture.
