Ingredients

Filling
  • 1 pound lean ground beef Can substitute with ground turkey or chicken for a healthier option.
  • 1 teaspoon salt
  • 1/4 cup salsa (green or red)
  • 1/2 teaspoon granulated garlic
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1 cup shredded cheese Cheddar, Monterey Jack, or a Mexican blend work well.
Tortillas
  • 12 pieces corn tortillas Alternatively use 24 mini corn tortillas.

Method

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, add the lean ground beef and season it with salt. Cook over medium-high heat, stirring often to break the meat into a fine crumble until well browned and fully cooked. Drain any excess grease.
  3. Stir in the salsa, granulated garlic, chili powder, cumin, and shredded cheese into the meat mixture until combined and the cheese has melted.
  4. Heat a griddle or iron skillet over medium heat. Warm the tortillas, one at a time, until pliable.
Assembly
  1. Take 1 to 2 tablespoons of the meat and cheese mixture and place it in the center of each tortilla. Roll them up tightly, seam-side down onto a greased or lined baking sheet.
  2. Bake in the preheated oven for 10-12 minutes until golden brown and crunchy.

Notes

For added flavor, include diced jalapeños in the filling. Lightly spray with cooking spray before baking for extra crispiness. Serve with guacamole, sour cream, or salsa.
