Method

Preparation
  1. In a small bowl, whisk together the chili powder, smoked paprika, cumin, coriander, oregano, cayenne pepper, and salt. Set this flavorful spice mixture aside.
Cooking
  1. In a large skillet, heat the olive oil over medium heat until hot. Add the sliced onion and bell pepper, cooking until softened, about 6 minutes. Transfer to a bowl.
  2. Add the ground beef to the skillet and cook, breaking it up until no longer pink, about 5 minutes. Add the minced garlic and stir for an additional 30 seconds.
  3. Add the prepared spice mixture to the beef, stirring to coat evenly for about 20 seconds. Return the cooked peppers and onions to the skillet.
  4. Stir in the tomato sauce, chicken broth, and Worcestershire sauce; bring to a simmer.
  5. Reduce heat to medium-low and let it simmer uncovered, stirring frequently, until thickened, about 5 minutes.
  6. Stir in cream cheese and cheddar cheese until smooth and melted.
  7. Serve the Cheesy Beef Taco Skillet as is, or over egg noodles or rice, garnished with favorite toppings.

Notes

Make it Vegetarian by swapping ground beef for plant-based ground meat or beans. Customize the cheese with pepper jack or mozzarella. Meal prep by cooking a larger batch and storing it for quick meals throughout the week.
