  • 5 cups Powdered Sugar Sweetens the frosting.

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare two 8-inch round cake pans by buttering and lining with parchment paper.
  2. Toast the pecans on an ungreased baking sheet in the oven for 10-15 minutes until aromatic and golden brown, then cool and chop finely.
  3. In a large mixing bowl, whisk together the vegetable oil, sugar, eggs, and vanilla extract until smooth.
  4. Stir in the spices (cinnamon, ginger, nutmeg, and cloves), salt, and baking soda until well combined.
  5. Fold in the flour gently until just combined, avoiding overmixing.
  6. Add the grated carrots and toasted pecans, mixing well to distribute.
Baking
  1. Divide the batter between the two prepared pans and bake for 35-40 minutes. Check for doneness by ensuring the cakes spring back when touched.
  2. Allow cakes to cool completely at room temperature before frosting.
Frosting
  1. For the cream cheese frosting, blend the cream cheese, unsalted butter, salt, and vanilla in a food processor until smooth.
  2. Gradually add the powdered sugar, 2 cups at a time, blending until silky.
  3. Once cakes are cool, frost the top of one layer, stack the second layer, and frost the top and sides of the cake.

Notes

For best results, use room temperature ingredients and let cakes cool completely before frosting. Try variations by adding crushed pineapple or raisins for different textures.
