Ingredients

For the Marinade
  • ¼ cup soy sauce A savory base that brings umami flavor
  • 3 tablespoons lime juice (from 2 limes) Adds a bright tang
  • 3 tablespoons vegetable oil Provides moisture and helps achieve sear
  • 1 tablespoon sugar Enhances flavors of the marinade
  • 1 teaspoon ground cumin Adds depth to the marinade
  • 1½ teaspoons ancho chile powder Adds smokiness and mild heat
  • 3 large cloves garlic (minced) Elevates overall taste
Main Ingredients
  • 2 pounds flat iron steak Juicy cut perfect for grilling

Method

Preparation
  1. In a dish large enough to hold the steak, whisk together the soy sauce, lime juice, vegetable oil, sugar, cumin, chili powder, and minced garlic until well combined.
  2. Using a fork, poke holes about an inch apart all over one side of the flat iron steak to allow the marinade to penetrate.
  3. Place the steak in the marinade, turning to coat evenly. Cover the dish and refrigerate for a minimum of 4 hours and up to 8 hours, turning the steak at least once.
Grilling
  1. Lightly oil the grill grates and preheat your grill to high.
  2. Grill the steak, covered, for 5-6 minutes per side for medium-rare, ensuring it reaches about 135°F (57°C).
  3. Remove the steak from the grill and let it rest on a cutting board, tented with aluminum foil, for about 5 minutes.
  4. Slice the steak thinly against the grain to serve.

Notes

Marinate overnight for deeper flavor. Use fresh herbs like cilantro for added freshness. Adjust spice levels to taste.
