  • 1 tablespoon ground cumin Adds warm earthiness.
  • 1 tablespoon chili powder Introduces mild kick.
  • 1 tablespoon oregano Adds floral notes.
  • 1/4 teaspoon ground cloves Adds a surprising twist.
  • 1 count orange, sliced Contributes additional citrus flavor.
  • 1/4 bunch fresh cilantro, chopped Adds freshness and color.
  • 6 pounds lean skirt steak or lean flank steak Main ingredient for grilling.

Method

Preparation
  1. In a large mixing bowl, combine all the marinade ingredients, excluding the steak. Whisk to mix thoroughly until well combined.
  2. Place the meat in a gallon-sized freezer bag, a shallow baking dish, or a non-reactive storage container.
  3. Pour the carne asada marinade over the meat, ensuring every inch of the steak is submerged. Seal the bag or cover the dish tightly, then refrigerate for a minimum of 4 hours, ideally overnight or up to 48 hours.
Cooking
  1. When ready to cook, remove the steak from the marinade and discard any leftover marinade.
  2. Preheat your grill to high heat and place the steak on the hot grill, cooking to your preference, ideally rare to medium-rare.
  3. Once cooked, let the meat rest for a few minutes, then cut into strips against the grain.
Serving
  1. Serve your carne asada strips in warm tortillas topped with your favorite garnishes like fresh cilantro, diced onions, or avocado.

Notes

For more pronounced flavors, marinate longer, up to 24 hours. Consider adding smoked paprika for a subtle smokiness. When using a grill pan indoors, ensure good ventilation due to smoke from garlic.
