Method

Preparation
  1. In a medium bowl, combine the ground beef, baking soda, and salt. Use your hands to mash the mixture until well combined, then allow it to sit for at least 15 minutes or up to 1 hour.
Cooking
  1. Heat the vegetable oil in a large nonstick skillet over medium heat. Add the chopped onion and cook for about 4 minutes until softened.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Add the seasoned beef mixture to the skillet and sprinkle in the chili powder, cumin, coriander, paprika, oregano, and cayenne pepper. Stir constantly and cook for about 5 minutes until the beef is no longer pink.
  4. Pour in the tomato sauce and water, followed by the sugar and lime juice. Bring to a simmer, then reduce heat to medium-low and cook uncovered for 10 to 15 minutes, stirring frequently until the liquid reduces and thickens.
Serving
  1. Taste and adjust any seasonings if necessary. Divide the beef filling evenly among the taco shells and serve immediately with desired toppings.

Notes

Marinate the beef with spices ahead of time for deeper flavors. Substitute ground turkey or chicken for lighter options. Leftovers can be refrigerated for up to three days or frozen for up to three months.
