Ingredients

Main Ingredients
  • 1 tbsp olive oil For sautéing
  • 0.5 pieces white onion, diced Adds sweetness and depth
  • 1 lb lean ground beef Main protein source
  • 2 tsp chili powder Adds warmth
  • 1 tsp ground cumin For earthy undertones
  • 0.5 tsp garlic powder Elevates flavor
  • salt and black pepper To taste
  • 2 tbsp chopped cilantro For freshness
  • 0.5 cup frozen corn Adds sweetness
  • 1 cup low-sodium black beans For texture and protein
  • 15 oz red enchilada sauce Foundation of the sauce
  • 5 pieces corn tortillas, cut into triangles Provides crispy texture
  • 1 cup shredded Colby Jack cheese Adds creamy, melty goodness

Method

Preparation
  1. Preheat your oven to 425°F.
  2. Cut corn tortillas into triangles and set them aside.
Cooking
  1. Heat the olive oil in a large, oven-safe skillet over medium heat.
  2. Add the diced onion and ground beef, seasoning with salt, pepper, chili powder, cumin, and garlic powder.
  3. Cook until the beef is browned and the onion is soft.
  4. Stir in the black beans, frozen corn, chopped cilantro, and red enchilada sauce, mixing well.
  5. Gently fold in the cut corn tortillas until fully coated.
  6. Sprinkle shredded Colby Jack cheese over the top.
  7. Bake in the oven for 10-15 minutes, until bubbly and the cheese is golden.

Notes

Consider marinating the ground beef with spices and lime juice for extra flavor. For a crispier texture, bake tortilla triangles separately before mixing them in. Add jalapeños or cayenne pepper for a spicy kick, and cream cheese for a richer sauce.
