Method

Preparation
  1. Preheat your oven to 450°F (232°C).
  2. In a 9x13-inch oven-safe casserole dish, toss the halved new potatoes and sliced carrots with 1 tablespoon of olive oil and 1/4 teaspoon of salt.
  3. Lay the chicken leg quarters on top of the vegetables.
  4. In a small bowl, whisk together the grainy Dijon mustard, balsamic vinegar, maple syrup, garlic powder, dried thyme, and additional 1/2 teaspoon of salt.
  5. Pour the marinade generously over the chicken and vegetable mixture.
Cooking
  1. Place the dish in the preheated oven and roast for 45-50 minutes.
  2. Use an instant-read thermometer to check the chicken; it should reach an internal temperature of 165°F (74°C).
  3. Monitor the browning; cover with aluminum foil if it seems to be getting too dark.

Notes

For more flavor, marinate the chicken overnight. For extra crispy skin, switch on the broiler for the last few minutes of cooking. Serve with a crisp green salad or coleslaw.
