Ingredients

Muffin Base
  • 1 can cinnamon rolls Use refrigerated cinnamon rolls.
  • ⅔ cup apple butter Provides aromatic sweetness.
  • 1 medium apple, peeled and diced Adds freshness and crunch.
  • 2 large eggs For binding the mixture.
  • ¼ cup Half and Half Add creaminess.
  • 1 teaspoon vanilla extract For flavor enhancement.
Spices
  • 2 teaspoons cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon nutmeg
Toppings
  • ½ cup chopped pecans For texture and flavor.

Method

Preparation
  1. Preheat your oven to 375 degrees Fahrenheit and spray your muffin pan with non-stick cooking spray.
  2. Unroll the can of cinnamon rolls and slice each roll into 6-8 pieces.
  3. Set the icing from the cinnamon roll can aside for later use.
Mixing
  1. Toss the sliced cinnamon rolls in the apple butter until well coated.
  2. Fill each muffin cup about two-thirds full with the cinnamon roll mixture.
  3. In a separate bowl, whisk together the eggs, Half and Half, vanilla, cinnamon, cloves, and nutmeg until well combined.
  4. Pour the egg mixture over the cinnamon rolls, again filling each cup two-thirds full.
  5. Sprinkle chopped pecans on top of each muffin.
Baking
  1. Bake in the preheated oven for 15-20 minutes, or until golden brown and cooked through.
  2. Heat the reserved icing in the microwave to make it easier to drizzle over warm muffins.
Serving
  1. Allow muffins to cool slightly before drizzling with icing.
  2. Serve warm and enjoy!

Notes

For extra flavor, consider adding a pinch of nutmeg or some fresh chopped apples. Variations include different nuts or adding brown sugar for added sweetness.
