Ingredients

Main Ingredients
  • 1 cup finely ground almond flour (packed) Creates a lovely base for the cookies with a subtle sweet flavor.
  • 3 tablespoons ghee (softened butter or vegan butter like Earth Balance) Adds a creamy texture for a melt-in-your-mouth finish.
  • 3 tablespoons maple syrup Contributes sweetness with warm, caramel undertones.
  • 1/2 teaspoon vanilla extract Adds depth and richness to the overall taste.
  • 1/4 teaspoon salt Enhances all flavors for a balanced treat.
  • 3 tablespoons jam (homemade or store-bought) Use your favorite jam for a juicy center.

Method

Preparation
  1. Preheat oven to 350°F (175°C). This ensures even baking.
  2. Line a baking sheet with parchment paper or use an ungreased baking stone.
  3. In a small bowl, combine the almond flour, ghee, maple syrup, vanilla, and salt. Mix until a cohesive dough forms.
  4. Scoop out portions of the dough and roll into balls. Place on the baking sheet and create an indentation with your thumb.
  5. Fill each indentation with 1/2 to 1 teaspoon of jam.
  6. Bake the cookies for 10-12 minutes until golden brown on the bottom.
  7. Let cookies cool on the pan for 10 minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container in the refrigerator for up to 1 week, or freeze for up to 3 months. Consider trying different flavors of jam or adding nuts for extra texture.
