Ingredients

Main ingredients
  • 3 pieces small/medium zucchini Choose firm zucchinis that feel heavy for their size.
  • 1.5 tablespoons extra-virgin olive oil Brings moisture and crispiness.
  • 2 tablespoons panko breadcrumbs Creates a crunchy coating.
  • 2 tablespoons finely grated Parmesan cheese Can substitute with nutritional yeast for vegan option.
  • 1 tablespoon white whole wheat flour or all-purpose flour Helps bind the coating.
  • 0.5 teaspoon kosher salt Balances flavors.
  • 0.25 teaspoon onion powder Enhances overall flavor.
  • 0.25 teaspoon ground black pepper Adds a gentle kick.

Method

Preparation
  1. Preheat your oven to 200°F if you want to keep the zucchini warm between batches.
  2. Trim the ends off the zucchini and cut them into quarters lengthwise. Slice crosswise into 3/4-inch thick half-moons.
  3. In a large mixing bowl, coat the zucchini with extra-virgin olive oil.
  4. In a separate bowl, mix the panko breadcrumbs, Parmesan cheese (or nutritional yeast), flour, kosher salt, onion powder, and black pepper.
  5. Sprinkle the dry mixture over the zucchini and toss to evenly coat.
  6. Preheat the air fryer to 400°F.
Cooking
  1. Place half of the coated zucchini in the air fryer basket in a single layer and air fry for 7 to 9 minutes, shaking the basket halfway through.
  2. Once cooked, transfer the zucchini to a serving plate or a parchment-lined baking sheet to keep warm in the oven. Repeat with the remaining zucchini.

Notes

For the crispiest zucchini, avoid overcrowding the air fryer basket. Experiment with other seasonings like garlic powder or paprika. Adjust cooking time based on your air fryer model.
