  • 1 tsp Ground Cumin Offers a warm earthy depth.
  • 1 tsp Garam Masala A quintessential Indian spice blend.
  • 1 tsp Ground Turmeric Adds a bright yellow hue.
  • 1.5 cups Fat-Free Yogurt Forms the base of the marinade.
  • 2 tbsp Tomato Purée Adds a slight sweetness.
  • 1 tbsp Garlic Purée Brings robust flavor.
  • 1 tbsp Ground Ginger Compliments the other flavors.
  • Salt Enhances all flavors.
  • Black Pepper Adds a hint of heat.
  • 1 tbsp Vegetable Oil Helps with cooking.
  • 1 Lemon Freshly squeezed juice brightens the marinade.
  • 2 Limes Juice elevates the dish's flavor.
  • 15 Fresh Mint Leaves Imparts a refreshing note to the yogurt dip.
  • Roti Traditionally Indian flatbread for scooping up the chicken.
  • Pilau Rice Pairs perfectly with the bold flavors.

Method

Preparation
  1. Chop the chicken breast into bite-sized chunks.
  2. In a large bowl, combine the paprika, ground cumin, garam masala, ground turmeric, yogurt, tomato purée, garlic purée, and ground ginger. Add salt and black pepper to taste, then squeeze in the juice from one lemon.
  3. Add the chicken chunks to the marinade, ensuring each piece is well coated. Let it sit for at least 30 minutes, preferably in the fridge for a few hours or overnight.
  4. Thread the marinated chicken pieces onto skewers, leaving a little space between each piece.
Cooking
  1. Preheat your air fryer to 200°C (392°F). Place the skewers inside and cook for around 17 minutes, turning halfway through.
Yogurt Dip Preparation
  1. In a blender, combine the fat-free yogurt, juice from the two limes, fresh mint leaves, and a pinch of salt and pepper. Blend until smooth and creamy.
Serving
  1. Once the chicken skewers are cooked, take them out and let them rest for a minute. Serve with the yogurt dip, pilau rice, and warm roti.

Notes

For extra juiciness, consider marinating the chicken overnight. You can add chili powder or cayenne pepper for more heat. Using bell peppers or onions between the chicken chunks enhances presentation and flavor.
